Who else needs some side dish inspiration about now?! Cooking for clients each week I have a whole roster of recipes on how to make the same vegetable in different ways. Here is one of my favorite ways to make my favorite leafy green ✨GINGER GARLIC KALE✨! The whole recipe comes together in 10 minutes and it goes great with so many different flavor profiles - I love to serve it with Thai curry, Indian Dahl, and all Asian dishes! Plus check out my stories for tips on how to chiffonade your kale, mince your garlic and my number one life changing ginger tip! Here’s what you need:

INGREDIENTS
1 Tsp water
1 bunch kale (any variety), thin chiffonade
2-4 cloves garlic, minced
1-2 inches ginger, microplaned or minced
1 Tsp neutral oil
Salt

INSTRUCTIONS
1. Heat a pan on medium high heat and add water. Once water starts to sizzle add kale and toss to make sure it is evenly cooking.
2. Once kale starts to turn bright green make a pool in the middle of the pan and add oil. Add garlic and ginger and cook until fragrant, 1-2 minutes.
3. Once ginger and garlic are ready turn heat to medium low and toss kale with aromatics until evenly distributed. Once kale is soft and bright green turn off the heat and keep tossing until kale is completely coated in garlic and ginger.
4. Taste for salt and you’re ready to serve!
