Leftovers For Breakfast: Fried Rice

Last week I mentioned my love of leftover for breakfast and how there are so many fun ways to make it! So I figured I’d start a series of how I make my leftover breakfasts starting with 🍚 BREAKFAST FRIED RICE🍚! It’s not so much a recipe as a guide to use what you have to make something delish but I’ve still written out a loose guide for you! And of course you can check out my stories/highlights for step by step video. Feel free to omit or add anything you have!! This is frontier a choose your own adventure dish! Here’s what you need:


INGREDIENTS
Neutral oil
1-2 cups leftover rice or cauliflower rice
At least a 1/2 leftover veggies or meat, cut into tiny bite size pieces
4 garlic cloves minced
1/4 cup frozen peas *optional
1 inch ginger minced *optional
A few scallions chopped or 1/2 of a sautéed onion
2-4 eggs, scrambled
Coconut aminos or soy sauce
Sesame oil
Kimchi, chopped *optional
Salt


INSTRUCTIONS
1. In a large pan add a bit of oil and on high heat heat through leftover veggies and meat, about 5 minutes or more like 10 if you want things crispy. Remove from pan and aside.
2. Add another glug of oil and add minced garlic and ginger, cook until fragrant, 30 seconds to a minute.
3. Add rice and stir to coat with fried ginger and garlic. Spread into an even layer and let fry undisturbed for one minute and then mix. Repeat 2-3 times until rice is crispy.
4. Add scallions and cook one minute
5. Add peas and cook one minute
6. Make a pool in the middle of the rice, add a little oil and scramble. Once completely scrambled mix into rice until evenly distributed.
7. Turn heat off and salt to taste. Add coconut aminos and sesame oil to taste. Add kimchi now too if you want. Mix and your ready to eat!
