Sunday Tomato Sauce

Sunday sauce! Gravy! Pomodoro! No matter what you call it 🍅TOMATO SAUCE🍅 is maybe the ultimate comfort food and perfect to make on a lazy Sunday (or any day in quarantine). When I was growing up we would have pasta and gravy as my grandpa Meloni called it EVERY Sunday no matter what, so today’s sauce is dedicated to him. Below I’m sharing my basic recipe but feel free to USE WHAT YOU HAVE! I walk you through substitutions in my stories! This recipe is much more about the way I cook the ingredients than what ingredients I’m using. So check out my stories, raid your pantry and get your sauce on! Here’s what you need:


INGREDIENTS
1 large onion, small dice
At least 4 cloves of garlic (OR MORE)(I used a half of a head), minced
Lots of good olive oil
28 oz can crushed tomatoes
28 oz can diced tomatoes
28 oz can whole tomatoes, then crushed by hand
1 tbs tomato paste, if you have it I didn’t
1 Tbs honey or sugar
1 stick unsalted butter ***tomato purée could also be used! ***if you only have 15 oz cans use a small
onion and less garlic


INSTRUCTIONS
1. Add a few glugs of olive oil to coat the pan and heat on medium. Once shimmering add onions and satire in medium/medium until translucent but not brown, about 10-15 minutes
2. Once onions are ready add garlic and sauté until fragrant 1-2 minutes
3. Add all the tomatoes (crushed, diced, paste) and mix. Turn heat to medium high, bring to a hard simmer and then immediately down to a soft simmer. Continue simmering on low/medium low so you have small gentle bubbles, for one hour
4. After an hour add your sugar and mix, loosely cover leaving about an inch of air and continue simmering for another two hours OR LONGER!
5. Once the mandatory 2+ hours of simmering has commenced, salt taste and add about 1/2 of water to loosen up the sauce. Then add one stick of butter and let it melt into the sauce. Serve with pasta and mangia!
