Three Bean Salad

What to do will all those canned beans when you’re sick of rice and beans and soup?! THREE BEAN SALAD! This is my husband @killacalio’s family’s dish that I reversed engineered back when we were living in the van. It’s fresh, vibrant and get better the longer it sits in the fridge! It relies heavily on pantry staples so hopefully you can make this at home too! Here’s what you need:


INGREDIENTS
1 can white beans like cannellini or great northern, drained and rinsed
1 can kidney beans, drained and rinsed
1 can garbanzo beans, drained and rinse
1/4 cup white vinegar
2 Tsp salt, plus more to taste
1 small red onion, finely chopped
1/2 bunch parsley, tender stems removed, finely chopped
1 Tbs olive oil
Freshly ground pepper to taste


INSTRUCTIONS
1. Add rinsed and dried beans to large bowl. Add salt and vinegar and mix well.
2. Add red onion and parsley, mix to combine.
3. Add olive oil and freshly ground pepper. Mix again. Taste and add more salt, vinegar and/or pepper if your heart desires!
4. Cover and refrigerate at least one hour
