Fennel Chimichurri

My friend @kimizimi recently posed the question “what do you do with all of your fennel fronds?” I love to use fennel fronds like herbs, mixing into citrus salads or garnishing a soup. But one of my favorite ways to use up a bunch of them is in my ✨FENNEL CHIMICHURRI✨ Bonus: it uses up any sad herbs you have wilting in your fridge! Here’s what you need:

INGREDIENTS
Fronds from 1 fennel bulb, finely chopped, about 1-2 cups
1 cup parsley, finely chopped
1 cup cilantro, finely chopped
1 medium shallot, minced
4 cloves garlic, minced
1/2 olive oil
1/4 cup apple cider vinegar
Salt
Pepper
Hot red pepper flakes

INSTRUCTIONS
1. In a large bowl mix together all your chopped ingredients, stir until well combined. Add more oil too thick. Taste for salt, pepper and red pepper flakes. Taste again and adjust any seasonings to your liking
Serve with roasted veggies or with a juicy steak!
